قال عيسى بن هشام: فدخلوا ودخلنا خلفهم وجلسوا وجلسنا على مقربة منهم وما خلع الخليع طربوشه ورداءه حتى نزع العمدة عمامته وعباءه وما طرق الخليع بيده على المائدة حتى صفق العمدة بكفيه يستدعيان الخادم فحضر ومعه قائمة الألوان فتناولها العمدة ونظر فيها ثم ناولها الخليع وقال: ترجم لي فأخذها الخليع وتأمل فيها ثم التفت إلى الخادم وقال له: وأين اللون الذي أكلت منه بالأمس فقد كان لذيذًا؟ وأخذ يسرد الألوان حتى ينتهي منها والعمدة لاه عنه والتاجر منصت إليه.
الخليع (للعمدة) ماذا تختار؟
العمدة أختار الشوربة ومن بعدها لحم الفرن.
التاجر وأنا أطلب كبابًا ورزًا وقرعًا.
الخليع (للخادم) أعطني ما يفتح به الطعام ثم خلاصة اللحم ورزًا بفاكهة البحر ودجاجة بعش الغراب والكمأة وهليونا بالسمن.
العمدة ما هذه الأسماء؟
الخليع هذه مآكل خفيفة لا تقوى معدتي على هضم سواها.
التاجر كل ما يعجبك والبس ما يعجب الناس!
ʿĪsā ibn Hishām said: They went inside, and we followed behind. They sat down, and we took seats nearby. The Playboy took off his tarboosh, and immediately the ʿUmdah removed his turban and cloak. When the former beat on the table with his hands to call the waiter, the ʿUmdah clapped with his. The waiter came up with the menu. The ʿUmdah grabbed it, took a look, and then handed it to the Playboy. “Translate for me!” the ʿUmdah asked. The Playboy took it and perused the contents. “Where’s the item I had yesterday?” he asked the waiter. “It was delicious.” The Playboy now proceeded to list the various choices until he reached the end. The ʿUmdah was paying no attention, but the Merchant listened carefully.
Playboy (to the ʿUmdah) What would you like to order?
ʿUmdah Broth, and, to follow, grilled meat.
Merchant I’ll have kebab, rice, and pumpkin.
Playboy (to the waiter) First I’ll take the hors d’oeuvres, then a meat omelette, rice with seafood, chicken with mushrooms, truffles, and asparagus with butter.
ʿUmdah What are all those strange words?
Playboy They’re light foods. My stomach can’t digest any other kind.
Merchant As the saying goes, eat whatever you like, but wear clothes that please other people!

قال عيسى بن هشام: فيجيء الخادم أولا للخليع بفاتحة الطعام وإذا هو زيتون وفجل وسمك ملح وزبدة فيتأمل العمدة فيها ثم يميل على قطعة الزبدة فيبتلعها ويقول ما هذا الخلط أزبدة وسمك فيطلب الخليع سواها وما يأتي الخادم بصفحة الشوربة للعمدة حتى يكون قد أتى على ما كان أمامه من الخبز ومال على نصيب الخليع فأكله.
العمدة (العمدة للخادم) وأين الخبز؟
فيأتيه الخادم بقطعة أخرى فيفتها في المرق حتى يفيض على المائدة وبعد أن يلتهم ذلك يطلب صفحة أخرى وخبزًا آخر فيأتي عليهما أيضًا ثم يطلب من الخادم اللون الثاني وفي أثناء ذلك يميل على أكل الخليع فيأخذ قطعة من الدجاجة ويضعها أمامه ويضع عليها السكين ليقطعها فتزوغ منه إلى الأرض فيتناولها بيده ويأكلها ثم يأخذ قطعة من عش الغراب فيقضم منها ثم يعيدها إلى صفحة الخليع ويقول له: ما هذا القشر؟ تطبخونه هنا وهو عندنا على الجسور يلعب به الصبيان؟
ʿĪsā ibn Hishām said: The waiter came back with the hors d’oeuvre for the Playboy: olives, radish, salted fish, and butter. The ʿUmdah took a look at them, leaned over towards the slice of butter and gulped it down. “What’s this weird mixure?” he asked. “Butter with fish?” The Playboy asked for some more. But no sooner had the waiter reappeared with the bowl of broth than he discovered that the ʿUmdah had already eaten all the bread that had been put there for him. He leaned across to grab the Playboy’s share and gobbled it down.
ʿUmdah (to the Waiter) Where’s the bread?
The waiter duly brought him another piece. The ʿUmdah dunked it in the bowl of broth until it spilled on to the table. He gobbled that down too and asked for another bowl and some more bread, both of which he downed quickly. He asked the waiter to bring something else. All the while, he kept leaning over the Playboy’s plate. He took a piece of chicken, put it down in front of him and tried to cut it with his knife. It fell on the floor. He got up from the table, picked it up in his hands, and ate it. He then took a piece of mushroom, nibbled at it, then put it back on the Playboy’s plate. “What’s this stuff?” he asked. “They may cook it here, but where I come from you can find it on dikes; children play with it.”

ثم يحضر الخادم بما طلب فيطلب منه خبزًا أيضًا فيزمجر الخادم ويقول: ليس مخبز الرمالي هنا.
الخليع (للخادم) ما هذه السفاهة يا جورج؟ أليس كل شيء له ثمن ونحن بدرهمنا نطلب ما نريد؟
الخادم (للخليع)
